Because of its proximity to the salt flats and the volcanic soil of the region, our Raw Organic Tricolor Quinoa is a good source of magnesium, phosphorus, and iron. Quinoa is also a good source of fiber and contains a robust 5 grams of protein per serving along with trace amounts of potassium, zinc, and calcium. While Quinoa is often used as a substitute for grains, it is in fact a seed making it gluten-free.
One of the more impressive qualities of Quinoa is its essential amino acid profile. Because of the broad spectrum of amino acids present in Quinoa, it comes very close to matching the standards set by the FAO for human nutritional needs. Organic Quinoa has a natural coating of saponins. Because these saponins have a bitter taste, they are not susceptible to crop destruction by pests. Nature's own protection ensures that pesticides are not required to protect the crop.
Once the Quinoa is harvested, it is washed in spring water to remove the saponins and their bitter flavor. Though our Raw Organic Tricolor Quinoa is washed at the source, we always recommend rinsing your quinoa before preparing it. Quinoa is delicious when sprouted and can also be cooked just like rice.
